I am pretty comfortable with using student input from either expressions or tables and connecting it to a function in a graph.

However, I am using the randomGenerator to select a random function (as opposed to simply random coefficients) from within the graphing screen:

It is passing through the graph just fine, but I don’t have a way of displaying the function to students through the note.

You’ll have to type the latex in manually. You could also build the function in CL instead of the graph and duplicate the use that way but I prefer the former.
