To answer your first question, I’ve used this suggestion by @Daniel_Grubbs a lot. Since you don’t need to press submit, just add another column in your table and have the content set to display a certain emoji depending on whether the answer is correct.

Multiple Answer Checking w/ Locking Cells when Correct

I wanted students to have multiple (but limited) opportunities to check their answers in a table and preserve the mark in the Results column. I also wanted to avoid mistakenly deleting a correct answer, so correct cells will lock when the button is pressed.
