Is there a way to disable the keypad from popping up in a cell yet? It is super annoying that it covers up the text being typed. I know formatting it as text will make it go away, but I want the format as math so it shows up as a fraction.

If it’s not student entry, you can set the column as text, but use backticks to still create latex.
